Gourmet scroggin slice - The Carefillery New World

- 1 Small pot
- 1 Blender, processor or potato masher
- 1 Large bowl
Ingredients
Wet mix
- ½ cup / 100 g dates The Carefillery
- ½ cup / 125 ml coconut oil or 125g butter
- ¼ cup / 60 ml maple syrup or golden syrup
- 1 tsp / 5 ml vanilla extract or vanilla essence
Dry mix
- 1 cup oats
- 1 tsp baking powder
- ½ tsp cinnamon
- ½ cup desiccated coconut or shredded coconut
- 3 cups / 450 g post workout mix The Carefillery
Instructions
Before you start
- Preheat the oven to 180 °C. Line a baking dish with baking paper.
Wet mixture
- Roughly chop ½ cup dates. Add the dates, ½ cup coconut oil and ¼ cup maple syrup to a small pot on medium-low heat and cook for 5 minutes, or until the oil is melted and the dates have softened. Add 1 tsp vanilla extract then carefully blend or mash the mixture until smooth and well combined.
Dry mixture
- In a large bowl combine 3 cups post workout mix, 1 cup oats, ½ cup desiccated coconut, 1 tsp baking powder and ½ tsp cinnamon.
Combine mixtures
- Pour the wet mixture into the bowl with the dry mixture and stir until well combined.
Bake slice
- Transfer the mixture into the prepared baking dish and evenly spread, using a spatula to flatten and lightly press down. Bake in the oven for 18-20 minutes or until lightly golden. Allow to cool before slicing.
